For scrambled eggs, omelets, French toast, and other breakfast dishes, combine equal parts of egg powder and warm water (1:1 ratio). Mix thoroughly until smooth, then cook as you would with fresh eggs.
To use in baking—such as bread, muffins, cookies, or cakes—add the dry egg powder directly to your dry ingredients. There is no need to reconstitute it first. Simply increase the liquid in your recipe (milk, buttermilk, water, etc.) by the same volume as the egg powder used.
Measurement conversions: One quail egg equals 0.65 tablespoons (approximately 4.8 grams) of egg powder plus 0.65 tablespoons (approximately 9.6 mL) of water. One chicken egg equals 2 tablespoons (approximately 14.7 grams) of egg powder plus 2 tablespoons (approximately 29.6 mL) of water.
No refrigeration is required unless the powder has been reconstituted with water.
